matcha strawberry cream puffs

HELLO FOLKS of the internet. where has july gone?! the days all rolled into one and suddenly it’s august and we’re left with only. 3. weeks. left of summer. tragic.

the thought of matcha cream puffs was pinned in the back of my brain from one of those random videos that show up on your fb feed. and it’s one of those rare times that they’re actually relevant to you… like a short clip of nothing but a close-up of someone’s hands bursting open matcha cream puffs, shot in different angles, to show all its luscious glory.

so despite there being plenty of other things on my “to bake” list, such as brooks headley’s chocolate & eggplant dessert,  and many flavour combinations brainstormed: earl grey tea caramelized white chocolate, lavender & apricot, pistachio & raspberry– i somehow always fall back onto matcha.

nutella-stuffed matcha oatmeal cookies

hello hello!

it’s been too long. the paradox of time is that it can fly by, yet my carrot cake post seemed like an eternity ago, not 3 months. but the good news is, over the course of the next few weeks i will be posting lots and lots of travel-related foodie posts in various European cities :))))

for now, i present you this cookie.

the title is not an entirely accurate name of the cookie… i have issues with brevity. a truer name would be nutella-stuffed matcha oatmeal cookies with raspberries with a slightly smores-y feel due to the addition of marshmallows & graham crackers 

but i can’t imagine that catching on.

this creation came about because of something i’ve never done before–making a stuffed cookie. i also had this idea in my head of wanting something well balanced in flavours (sweet and bitter and tart), balanced in textures (creamy, crunchy, gooey, soft & chewy), plus something that i would want to eat and wouldn’t be able to find anywhere else. oh, and something that’s not super-duper decadent (hence the addition of oats) so you wouldn’t feel too guilty.

so this cookie was born!

Coconut Matcha Marble Cakelettes

Every time I intend to make something out of my comfort zone / something crazy creative it ends up being quite normal– like these, haha. Then again if it’s too crazy creative it can blur into being gimmicky.  We’ll give it a week, I’ll think of something… actually, I finally got around to checking out Alice Medrich’s Flavor Flours and Dominique Ansel’s book, can’t wait to immerse myself in that.

So it’s reading break, and for me that means getting “life stuff” done. Stuff that I usually shove to a corner in my mind. Like my class 5 test, and uh mm yeah well uh hm I didn’t pass, haha. The examiner was the same lady who passed me for my N, and I was feeling relaxed/hopeful. A bit too relaxed, because about 20 minutes in I forgot to mind the speed limit (50km/h…. who actually drives that speed like pls) because we were about to go on the highway and I was thinking omg we’re going on the highway I haven’t failed yet!! which is the ultimate irony because that was the moment when I sped up to keep up with traffic and yeah it was game over at that point. Also in my defense it was downhill, ok.

Matcha Croissants

I didn’t think I’d ever get around to it, but I’m finally able to cross off “croissants” on my baking goals list (!!!) along with “a plated dessert“, “dad’s birthday cake” and “wedding cake“. All that’s left is a Brooks Headley dessert, but I don’t know if I’ll ever be ready for a chocolate eggplant dessert…

I had to wait until the opportune moment– one (relatively free) rainy day for me to not mind staying home to babysit my dough, and when I happened to have good quality butter on hand. I was lucky enough to get my hands on some Kerrygold unsalted butter, so all the stars aligned one rainy day for me to take the plunge.
