Cranberry Pumpkin Gingerbread Muffins

Okay, not going to lie, I was hoping I’d end 2015 with a bang or at least make some celebratory Christmassy fancy holiday chestnut buche de noel (I even have the heavy cream sitting in my fridge), but instead I present you guys with some more boring muffins, my specialty, haha……..

I do have a good reason though, I have a special friend whom I met briefly while interning/volunteering last summer, and even though we traveled together for two or three days, we really connected well and life has a funny way of bringing people back together again. Anyway, she stopped by Vancouver after her exchange over in New Brunswick (lol) was finished, and it’s been a really action packed week, as it’s got to be when you’re trying to show someone the highlights of your home city.

Earl Grey Cream Puffs

Arghghasdhgashgh not that it’s any excuse but this post has been sitting in my draft folder for way too long and it can only mean one thing……..

….exams are making me go a bit insane. and ive been listening to a lot of drake.

exam season = fluctuation between caffeinated highs (+ the consequential insomniac study sesh), the slumps of apathy and the eternal question of what all this means in the end, if it means anything at all……….

let’s face it, the best part about exam season are those hilarious articles that start popping up highlighting everyone’s shared pain

Raspberry Oat Muffins

These muffins were inspired by a recent visit to Allegro Cafe, a coffee shop perched above Whole Foods, that features Whole Foods baked goodies including their enormous muffins in a variety of interesting flavours: their power muffin, GF ginger rice muffin, supa vegan muffin, pumpkin chocolate muffin with maple glaze, raspberry oatmeal muffin… alongside savory stuff, coffee, tea and the usual. There’s no extra cost on special milks, and at the bar there’s stevia, agave, honey, in addition to natural sugars, and soy and almond in addition to the usual milk and cream. They also have their recycling situation sorted out really well, which is a refreshing sight. AND they have a stamp card system (every 12 stamps!) It’s a mystery as to why others still frequent that other coffee place…

Matcha Croissants

I didn’t think I’d ever get around to it, but I’m finally able to cross off “croissants” on my baking goals list (!!!) along with “a plated dessert“, “dad’s birthday cake” and “wedding cake“. All that’s left is a Brooks Headley dessert, but I don’t know if I’ll ever be ready for a chocolate eggplant dessert…

I had to wait until the opportune moment– one (relatively free) rainy day for me to not mind staying home to babysit my dough, and when I happened to have good quality butter on hand. I was lucky enough to get my hands on some Kerrygold unsalted butter, so all the stars aligned one rainy day for me to take the plunge.
